Last night, I really wasn't in the mood to cook. All I wanted to do after the gym was lay on the couch and watch The Bachelor and Pretty Little Liars. So, I made a quick dinner and did just that. I quickly cooked up two small pieces of chicken, cut them up in little pieces and put them over a mixture of romaine lettuce, spinach, some diced tomatoes, black beans, a tiny bit of cheddar cheese, some taco sauce, onions and broccoli. It was perfect! Totally hit the spot!
I cozied up on the couch and ate healthy Mexican and watched some of my favorite shows. : )
